Defining the colour, consistency and flavour of honey is as exciting as tasting wine – only sweeter! The colours can go from pale yellow to greenish-black, while the possible tastes span the range from floral and fruity to woody, spicy, nutty or earthy. The first impression says a lot about the type of honey. But describing this precious elixir in detail is anything but easy: honey contains more than 180 aromatic substances.

Terroir also plays an important role with honey, which is influenced by specific local and regional peculiarities. Bees love alpine herbs high up in the mountains as much as meadow flowers growing in city parks or in even the smallest “bee gardens” on urban balconies. Flavour intense, mossy, very tasty with a woody touch

Use in game dishes and with strong hard cheeses
